The essential difference between raw materials
Fresh raw milk is liquid with a moisture content of up to 87% to 88%. Raw milk is rich in natural fats, proteins, and active ingredients, making it highly nutritious; But at the same time, it is highly prone to spoilage and must be refrigerated and stored at 2-4 ℃. In addition, milk from different batches varies greatly and requires strict inspection and control.
Milk powder exists in powder form, with very low water content, stable composition, and easy storage. And its quality is stable. Compared to raw milk, if stored properly, it can be stored for a long time (at room temperature, it can be stored for six months to one year). But as a raw material, it needs to be reduced to milk before making yogurt.
Differences in Production Techniques (Core)
Process of Industrial Yogurt Production Line with raw milk
Milk collection → filtration → cooling and storage → standardization → preheating → homogenization → sterilization → cooling → fermentation → filling
Key points:
The raw material is liquid raw milk
Raw materials must be filtered, cooled, and stored refrigerated
Fat proteins naturally exist in raw milk, only need to be fine tuned and standardize

Process of Industrial Yogurt Production Line with milk powder
Milk powder measurement → Mixing and hydration with warm water for reduction and dissolution (45-55 ℃) → Filtration → Ingredients → Homogenization → Sterilization → Cooling → Fermentation → Filling
Key points:
Need to mix and hydrate the milk powder first
Milk powder should be fully dissolved and filtered, with careful consideration of the material and taste
Free adjustment of fat protein (making high protein/skim yogurt is very convenient)

Differences in Requirements for Production Equipment

Equipment required for Industrial Yogurt Production Line using raw milk (milk powder line can be saved)
Milk collection tank, milk pump, flow meter
Fresh milk filter, centrifugal milk purifier
Plate cooler
Low temperature refrigerated milk tank (2-4 ℃)
Milk truck cleaning, raw milk inspection equipment → Higher investment in raw milk production line, higher requirements for cold storage, and more complex maintenance
Equipment required for Industrial Yogurt Production Line using powdered milk (the original milk line can be simplified)
High shear mixing tank, used for milk powder dissolution and hydration
Hydration insulation system
Stronger mixing or emulsification equipment to prevent uneven dissolution
