Inconsistent dough hardness
Some parts of the dough are overly firm while others are too soft. Hard sections get rolled thinner under pressure, whereas soft portions expand and become thicker after extrusion. Local differences in water content and uneven resting time will also lead to this problem.
Solutions: Knead the dough until it is smooth with uniform firmness throughout. Fold the whole dough repeatedly and let it rest for 15–20 minutes. Manually roll the dough into roughly even-thickness sheets before feeding into the machine.
Skewed feeding / one-sided dough insertion
If the dough sheet is fed diagonally into the rollers, one side bears heavy pressure and gets pressed thin, while the opposite side is underloaded and remains thick, resulting in obvious thickness deviation between left and right sides.
Solutions: Feed the dough vertically and centrally into the rollers. Gently support both edges of the sheet and push it forward at a steady speed; never pull only one side.
Lumps, clumped dry flour or trapped air bubbles inside dough
Hard lumps will form thick bulges after passing through the rollers; air bubbles collapse under compression and turn into thin areas; sections piled with excess dry flour cannot be compacted evenly, causing irregular thickness.
Solutions: Knead thoroughly to eliminate all air bubbles. Dust flour lightly and evenly. Re-knead any dough containing hard particles.
Mechanical Malfunctions of the Dough Sheeter (Core Hardware Causes)
Asymmetric gap adjustment screws on both ends of rollers (Top Cause)
If the adjustment knobs on the left and right ends are tightened unevenly, the rollers will tilt, inevitably producing sheets thinner on one side and thicker on the other.

① Reset both knobs back to zero scale for synchronous recalibration;
② Rotate both knobs by the exact same number of turns for each adjustment. Start with a wide gap for test rolling, then fold and re-roll the dough multiple times for final calibration.

Worn rollers, non-parallel roller surfaces or deformed roller shafts

Long-term operation causes concave wear in the middle of rollers with less abrasion on both ends, resulting in thinner middle and thicker edges of dough sheets. Aged rollers may also bend under force and lose parallel axis alignment.
Solutions: For slight wear: repeatedly fold and roll dough multiple times for improvement. For severe wear: replace the pair of rollers entirely.
Stuck, damaged or under-lubricated bearings on one side
High rotational resistance on a single bearing leads to asynchronous roller rotation. Uneven stress during feeding overstretches one side of the dough and makes it excessively thin.
Solutions: Add food-grade lubricating grease. Replace bearings if they seize up or have excessive axial play/wobble.

Deformed frame or loose base fixing bolts

Unlevel placement with suspended machine feet causes slight shaking during operation, shifting roller stress distribution.
Solutions: Place the machine on a flat, solid worktop. Tighten all frame fixing screws and level the four adjustable feet.

Improper Operating Techniques of the Dough Sheeter

Unstable feeding speed: Fast feeding leads to insufficient compression (over-thick sheets); slow feeding causes over-compression and over-stretching (over-thin sheets).
Excessive single-pass thickness reduction: Feeding thick dough directly with a tiny roller gap forces violent extrusion and inconsistent dough stretching.
Standard Operation: Reduce the gap marginally each time for progressive rolling. Fold the dough twice before each pass through the rollers.
Environmental & Additional Influencing Factors
Vibration from the countertop or motor shaking displaces the whole machine during running.
Dough sticking on rollers causes local tearing and uneven thickness. Lightly coat rollers with edible oil or dust dry flour before each use to prevent adhesion.
