Working Principle of Meat Smoker Oven
The smoking oven operates through the synergistic interplay of temperature-controlled heating, hot air circulation, and controllable smoke generation. It integrates the functions of drying, cooking, smoking, and curing. The core operational processes are as follows:
Circulating Hot Air System
An internal fan drives the uniform circulation of hot air throughout the chamber. Working in conjunction with heating elements to raise the temperature, this system facilitates the dehydration, drying, and curing of food products, ensuring temperature consistency within the oven and preventing localized overheating.
Smoke Generation and Flavoring System
Internal smoke generators heat wood chips to produce smoke, while external smoke generators generate smoke at lower temperatures before channeling it into the chamber via ducts. The smoke adheres to the food products, imparting color and enhancing flavor. The external smoke generation method allows for the separation of open flames and tar, resulting in purer, cleaner smoke.
Temperature and Humidity Control
Equipped with dehumidification and humidification devices, and integrated with an automatic control system, the unit allows for the precise setting of temperature, humidity, and processing duration, thereby accommodating various smoking techniques-including cold smoking, warm smoking, and hot smoking.

Differences between Built-in and External Meat Smoker Oven

Smoking Effects and Flavor
Internal type: Wood chips are prone to scorching at high temperatures, easily producing a burnt, bitter taste and black smoke. The smoke temperature is high, resulting in rapid coloring, but the resulting flavor tends to be somewhat coarse.
External Smoke Generation: Smoke is generated at lower temperatures, resulting in purer smoke free of burnt flavors. This method is ideal for prolonged cold smoking and warm smoking, yielding a richer, more intense fruitwood aroma.

Temperature Control Stability
Internal Smoke Generation: The smoking process simultaneously generates heat, causing the oven temperature to spike easily. Maintaining precise low temperatures is difficult, making this method unsuitable for products requiring low-temperature, slow smoking.
External Meat Smoker Oven: Smoke generation is decoupled from the heating process, allowing for precise temperature control. This enables the execution of cold smoking (20–60°C), warm smoking, and hot smoking.

Product Applicability
Internal type is suitable for rapid coloring and simultaneous cooking-and-smoking processes-such as braised meats, roasted chicken, and dried tofu. It is not suitable for cured pork, cured sausages, or cold-smoked salmon.
While external type is suitable for cured pork, cured sausages, air-dried sausages, smoked fish, and European-style sausages. It can also accommodate standard cooked meats, offering greater versatility.
